The restaurant, catering, and fast food industry showed resilience in 2022, but not all establishments have recovered to pre-pandemic levels. The recovery has been severely limited by power cuts, and water cuts in some areas, which have put many operators, particularly independent businesses, at risk of closure. Larger companies and fast food chains have fared better than independent operators.

Short Recovery

In 2022, consumers returned to sit-down and takeaway orders, and analysts pointed to a growing trend towards convenience foods and quick service restaurants and takeaways, which was likely boosted by the improved delivery capability of many outlets during the pandemic. But since July 2022, food sales at restaurants and takeaways have been slowly declining. Power cuts have resulted in significant losses through food spoilage, disrupted service, a reduction in trading hours and the inability to serve certain food and drinks.

Competition

The restaurant and fast food segments are highly competitive. Large players and fast food chains are in a stronger position to manage increasing costs compared to independent eateries. Famous Brands said not many new competitor brands were emerging, existing competitors are well-entrenched, and competition is fierce. There is also greater competition between franchises, especially chicken franchises, and considerable internal competition between brands in the major franchising groups.

Lockdowns, supply chain constraints, unrest and load-shedding have had devastating consequences for South Africa’s restaurant, fast food and catering industry. Forced closures during hard lockdown and restrictions since, including reduced trading hours, alcohol bans and limits on the number of patrons have resulted in ongoing challenges. While fast food franchises have been relatively resilient, independent restaurants, coffee shops and fine dining restaurants have been significantly affected, and the catering industry has come to a standstill.

Claims and losses

As revenue dried up, many restaurants across the country closed down, including some well-known restaurants. Some establishments filed business interruption claims with insurers due to pandemic-related losses. Several insurers rejected claims, arguing that the losses were not caused by local occurrences of a notifiable disease within 40km of the business premises but to lockdown, the government and general public response to the pandemic. Policyholders sued and the Supreme Court of Appeal found in favour of the policyholders.

Restaurant and Consumer Trends

Technology and innovation continues to drive the industry. These include increasingly convenient online ordering options, more delivery options and dark kitchens, which prepare online food orders at centralised production facilities. Consumer lifestyle habits, shopping behaviour and food consumption patterns have changed and people are spending more time at home, ordering online, dining out nearer to home and reducing visits to malls. The challenging trading conditions have forced restaurants to cut costs, streamline menus and use innovative marketing strategies and brand loyalty programmes.

The South African Restaurant, Fast Food and Catering Industry

The South African restaurant, fast food and catering sector generated revenue of more than R57.25bn in 2016. According to the most recent figures published by Statistics South Africa, the restaurant/coffee shop segment generated just over 51% of the sector’s total income during the period 1 May 2017 to 31 July 2017, while the fast food and catering segments contributed 35.5% and 13.36% respectively. Although premium establishments catering for foreign tourists and niche upper-income customers continue to be well supported, the independent restaurants remain under pressure, as cash-strapped consumers endeavour to cut back on luxury spending. In addition to dwindling customer numbers, local food and beverages service providers report higher overheads and narrowing profit margins.

Cost containment strategies

In an effort to improve cost efficiencies several of the country’s leading franchisors have adopted vertical integration strategies. Famous Brands’ partnership with the Coega Dairy Company means that milk sourced from the dairy is used to make cheese, which is supplied to the Group’s franchisees. The group also has a majority stake in the roasting and packaging business, Java Lava Beverage Manufacturers, and has become one of the country’s largest coffee-roasting businesses. As centralised procurement facilitates quality control and allows for economies of scale in terms of purchasing and sourcing, Taste Holdings, through its Buon Gusto Food Services division, is able to manage the supply chain that serves its food franchisees.

The industry covers a broad spectrum of culinary experiences, ranging from fine dining to casual ‘pop-up’ eateries, street food and food trucks. Unlike the majority of independent restaurants, which generally operate from a single location, restaurant and fast food franchise chains have multiple branches.

Under Pressure

The difficult economic conditions have impacted negatively on catering companies with both the public and private sectors having had to tighten their belts. Going forward, insiders warn that a great number of jobs are likely to be shed following the recent ‘OutsourcingMustFall’ protest action that took place at institutions of higher learning across the country.

A Resilient Sub-Sector

In the fast food and restaurant sector local and international food franchises have proved to be more resilient than independent players who have found it difficult to cope with food inflation, increasing operating costs, power outages, dwindling customer numbers, and more recently, water shortages in many areas. Although the local fast food segment is highly competitive, both existing and prospective players believe that opportunities are plentiful, a view borne out by the entrance of numerous mega-brands over the past three years.
